Recipe

  • 1 Tablespoon of olive oil or water
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 carrots chopped
  • 2 celery chopped
  • 2 tsp paprika
  • 1/8 tsp cayenne
  • 1 Tbsp vegetarian seasoning (optional)
  • 1 cup red lentils, rinsed and drained
  • ½ tsp. ground coriander
  • 1 14 oz can crushed tomatoes
  • 1 Tbsp salt
  • 5-6 cups of water
  • 1 bay leaf

Directions

  1. In a large pot, sauté onion for a few minutes. Add the garlic, celery, and carrots. Leave for 5 minutes over medium heat.
  2. Stir the spices and lentils.
  3. Add the tomatoes, salt, water and bay leaf. Bring to a boil, reduce heat, and then simmer, for about 40-45 minutes or until lentils are cooked.
  4. Discard bay leaf. Season to taste by adding more spices if desired.
