Date Balls Desserts…desserts…desserts…Who does not like to eat them? These date balls are good and healthy for you. You can omit the sugar and just add the dates. Recipe

  • 2 cups of shredded coconut without sugar
  • 1 cups whole wheat pastry flour or rice flour
  • 1 teaspoon of salt
  • 2 cups of chopped dates
  • 2 tablespoons of sugar
  • 1/3 cup of warm honey
  • 1 teaspoon of vanilla

Directions

  1. Add the coconut onto a food processor with the flour and salt. Process for 1 minute.
  2. Add the dates and sugar and process for 20 seconds.
  3. Add the honey and process for 20 more minutes.
  4. Take out the mixture with a tablespoon and form into balls.
  5. Place the date balls on to a sprayed cookie sheet. You can leave in the ball shape or flatten with a fork.
  6. Bake at 350 degrees for 15 minutes. They will be soft but brown from the bottom.
  7. Let them cool. It makes about 20 balls.
