Recipe

  • 3 cans of coconut milk
  • 1 Mori-Nu silken tofu
  • 2 tablespoons of rice milk or soy milk in powder
  • ¼ teaspoon of salt
  • ¾ cup of sugar or agave to taste
  • ¼ cup of instant clear gel

Directions

  1. Take two pie plates and fill a layer of granola in the bottom of each one.
  2. Put the all of the ingredients in the blender except the instant clear gel.
  3. Blend for a few minutes and as is blending add the clear gel, little by little until it thickens. You might not use all the clear gel.
  4. Put the pudding on top of your granola on your pie plates and refrigerate.
  5. When cold decorate with your favorite fruit.
