Recipe

  • 2 cups sweetened shredded coconut
  • 1 cup coconut milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • ¼ teaspoon of salt
  • 2 tablespoons of Agave Nectar (or add more to taste)

Directions

  1. Preheat the oven to 350 degrees Fahrenheit, and coat a baking sheet with parchment paper or cooking spray.
  2. Whisk together the coconut milk, agave nectar and salt in a heavy saucepan.
  3. Add the flour and whisk thoroughly.
  4. Turn on to medium heat mixing continually until the mixture reaches a full boil, and continue to boil for about 2 minutes or until it has thickened.
  5. Remove from the heat and whisk in the vanilla and coconut.
  6. Drop the mixture by tablespoons onto the baking sheet, and bake the macaroons for 16 minutes, or until golden brown.
