Recipe

  • 1 pound firm tofu
  • 1 tsp salt
  • 1 tbsp parsley flakes
  • 1 chopped onion
  • ¼ cup rinsed, raw cashews
  • 2 tbsp nutritional yeast flakes
  • ½ tsp turmeric
  • ¼ tsp garlic powder
  • ½ tsp lemon juice
  • ½ cup water

Directions

  1. Crumble tofu with a potato masher or fork. Sprinkle with parsley and ¼ of the salt.
  2. Heat skillet and add onions to sauté. You can use a little of water for the onions to cook until they are translucent.
  3. Add the tofu to skillet and heat at medium to low until dry. (about 10 minutes)
  4. Blend the remaining ingredients, including the remaining ¾ teaspoon of salt, in a blender until smooth.
  5. Pour the blended mixture over the tofu in skillet and leave at medium heat until desired consistency.
  6. You can add green onions, olives, or/and tomato 3 minutes before tofu is done.
