Do you have some ripe bananas at home? How about making some banana bread? This recipe is healthy, delicious and easy to make. I hope that you enjoy this sweet bread.

Recipe

  • 2 mashed bananas
  • 2/3 cup brown sugar
  • 1/3 cup cashew milk (? cup cashews+ ? cup water)
  • ½ soy milk
  • 1 tablespoon lemon juice
  • ½ cup chopped walnuts
  • 1 tablespoon Egg Replacer or 2 tablespoon ground flax seed
  • ½ teaspoon salt
  • ¾ cup whole wheat flour and ¾ cup white unbleached flour
  • 3 teaspoons baking powder

Directions

  1. Preheat oven to 350 degrees
  2. In a large bowl, mix the flour, baking powder, egg replacer, salt and walnuts and sugar.
  3. Add the soy milk, cashew milk, lemon juice and bananas.
  4. Mix all the ingredients until well combined.
  5. Pour bread mixture into a loaf pan that has been sprayed. Bake for 45 minutes.
  6. Turn out of pan and cool.
