This baked oatmeal will surprise you. It tastes good! Vary the fruits and milk and enjoy a healthy breakfast meal.

Recipe

  • 3 cups Rolled Oats
  • 1/3 cup Shredded Coconut
  • 1/3 dates, chopped
  • 1/3 cup raisins
  • 1/3 cup flaked almonds
  • 1 tsp vanilla
  • 2 cups soy milk
  • 2 cups water

Directions

  1. Lightly oil or spray a glass 9”x9” baking dish.
  2. Layer first five ingredients: oats, coconut, dates, and raisins, almonds
  3. Mix wet ingredients: soymilk, water and vanilla.
  4. Pour soy milk mixture evenly over the dry mixture in the baking dish.
  5. Cover dish and place in the refrigerator overnight.
  6. Bake uncovered at 350? for 45 minutes or until heated through. Serve hot with additional soy or nut milk.
  7. Prior to baking you can add fresh or frozen fruit: blueberries, peaches or strawberries, grated apple.
