Ingredients for filling:
  • 1 cup apple juice concentrate, undiluted
  • 3 tablespoons cornstarch
  • ½ teaspoon vanilla (optional)
  • ¼ teaspoon of salt
  • 1 teaspoon ground coriander (optional)
  • 8-10 peeled and sliced apples
Ingredients for the Topping:
  • 1 ½ cups of flour, half white and half whole wheat
  • 1 ½ cups of rolled oats
  • ¾ cup brown sugar
  • ½ cup wheat germ or rice flour
  • ½ cup chopped nuts
  • ½ teaspoon salt
  • ¾ coconut oil

Directions

  1. Peel, core and cut apples into large wedges.
  2. Mix the apple juice, cornstarch, vanilla, salt and coriander.
  3. Add liquid mixture to apples and mix well. Pour into a 9×13 baking dish.
  4. Combine the flour, oatmeal, sugar, rice flour, nuts, and salt.
  5. Add the oil and combine well.
  6. Scatter the topping evenly over the apples.
  7. Bake at 350 degrees for 1 hour until the top is brown and the apples are bubbly. Serve warm.
